Here’s a lovely Irish Blessing for your special St. Patty’s Day

May the road rise up to meet you.

May the wind be ever at your back.

May the sun shine warm upon your face,

and rain fall soft upon your fields,

and until we meet again

may God hold you

in the palm of his hand.

Amen

And one more, because who can’t get enough of a good ole Irish blessing, right?!

This was a fun lucky charm green milkshake!

2 C vanilla bean ice cream

1 1/4 C milk

A bunch of fresh mint – washed and destemmed

6-8 drops of green food coloring

Lite whip cream for the top

a few lucky charms for the toppings

fun paper printed straws

That’s all folks and it was yummy.  If you want to make it more of a float just add some more scoops of ice cream.  Or add sprinkles to make it extra fun.  Next year I might try a healthy version of this.  I saw some with avocado and coconut milk.  Just go pin a bunch of recipes and then concoct your favorite ingredients in your own way!  That’s how I roll, a plop of this and a dash of that.  Will it explode?  hmmm…not really sure but I’m gonna mix it all up and see anyways.

We like to craft the rainbow around here so we made some rainbow paper chain links to dress-up our tee pee for all of five seconds, but it really became useful for dancing to river dance like a dangling piece of seaweed.  This was a fabulous craft for getting your tot to cut with toddler scissors and to play with a glue stick.  My favorite thing was the huge bangle that my daughter made for me.  I am a jewelry designer so anytime she makes me jewelry, I light-up inside.  Oh, standard paper chain links are 1″ X 8.5″ FYI.

We tried our luck with our first time offering some lucky charms to our little.  I get a little nervous buying things with such obvious sugar content in it but we needed some charms and it made it extra fun.  Both Stephen and I remember eating those at our grandparents houses and fishing for the marshmallows.

It’s tradition around here to have Guinness in cans and frosty glasses.  I don’t partake in Guinness but definitely push eating cabbage.  We love a little chess and Irish music, too.  I hope you had a lovely Saint Patrick’s Day and had a little bit of Irish Whimsy in your celebration.
