SUPER DUPER SIMPLE POTATO SOUP…because what’s life without having your kiddo beg for more!!! I find it very very hard to get my child to eat soups, or anything put together. So, I relish anytime I can get away with making a semi-normal home cooked meal. I love simple ingredients, we don’t need a lot of fluff to enjoy something, now do we?
Potato Soup Ingredients:
8 peeled potatoes – I think any kinda potato works! Chop them up about 3/4″ thick.
4 cups water with added chicken bouillon cubes
Season with salt and pepper (pepper if your child can stand it. Mine cannot!)
1/2 C butter
1/3 flour
2 1/2 C milk
That’s it folks. So simple. So combine potatoes, seasonings, and chicken broth. Bring to a boil and then reduce to medium heat for 20 minutes until your potatoes are soft.
Meanwhile, melt butter in saucepan, add flour and mix it in. Gradually mix in milk and whisk. Whisk until thick, super thick. Then combine with soup. Taste, taste, taste. Add more salt probably. All done. This one your kiddo will love!!! Serve with a green veggie, maybe some fruit. Get a little color on your plate but this will fill you up. Made a few meals for a family of 3.
